About Produced: Jairo Arcila is a third-generation coffee producer from Quindío, Colombia. After more than 40 years as a mill manager for one of Colombia’s major exporters, he retired in 2019 to focus fully on his own farms.

Since buying his first farm, Finca La Esmeralda, in 1987, he has gradually expanded to six farms across the region. Today, he grows a range of varieties including Caturra, Pink Bourbon, Java, Papayo, and Gesha, with support from his sons Carlos and Felipe Arcila (co-founders of Cofinet), who have helped refine his picking, processing, and quality.

About coffee variety : Castillo is a coffee variety developed by Colombia’s Federación Nacional de Cafeteros (FNC) through its research centre, Cenicafé, and released in 2005. It was created by crossing Timor Hybrid (for disease resistance) with Caturra (for cup quality and compact growth), aiming to improve both productivity and resistance to coffee leaf rust. Castillo is widely grown across Colombia due to its adaptability to a range of altitudes and its strong, reliable yields. In the cup, it is known for a balanced profile with notes of citrus, red fruits, and caramel, supported by bright acidity and a smooth, medium body.
